Toriishi was founded in 1978 as a chicken shop. We purchase fresh whole chickens from contracted chicken farms around the country, with whom we have had close ties since our days as a chicken wholesaler. By splitting and skewering the whole chickens that arrive in the store, we are able to offer them at low prices as well as being delicious. We are committed to protecting the popular pleasure of yakitori.
We provide reliable products at low prices that are not only delicious. We purchase fresh whole chickens from contracted chicken farms around the country and quickly butcher them under proper management. You can enjoy chicken dishes that you can't find anywhere else.
In order to provide delicious yakitori made from fresh chicken at a reasonable price, we skewer the chicken by hand every day in the workshop on the second floor of our main store. We can confidently recommend our chicken because we skewer it by hand and use only carefully selected chicken.
The taste has been added to and maintained since the restaurant was founded. Toriishi's sauce has a unique mellowness. In fact, we purchase whole chickens, cut them up in the restaurant, and then use the resulting fresh chicken bones to prepare the chicken and simmer them thoroughly with the sauce. This unique taste is only possible because Toriishi has a route to Kashiwaya.
Won first place in the Ishoku Sokuhatsu PREMIUM 2014!
We won first place at the Tenma Tenjin food-walking bar event "Isshoku Sokuhatsu PREMIUM 2014"! We won the gold prize! This "Momoyaki" was served at the bar event. A single chicken thigh is grilled to perfection, resulting in a juicy dish. It is served with Toriishi's signature sauce. It goes perfectly with draft beer.
Chicken skin is often eaten with salt, but it actually goes well with sauce. Especially with Toriishi's sweet special sauce. However, the skin is fatty and does not mix well with the sauce. So, we skewered the chicken in a way that Toriishi does, grilling and letting it rest for three days (after three days, it will be about half its size), and thoroughly matured the flavor of the chicken skin and the special sauce.
There are many ways to eat yakitori, but not all yakitori is grilled with salt. Toriishi sauce in particular goes perfectly with chicken. Based on our experience, we have decided on the sauce and salt grilling for each cut. Please feel free to let us grill the first piece of each cut.
